Potato Palooza and Strawberry Fields

I think my boys are coming tonight, so I’m in planning mode. With all that was happening on Easter, I forgot to prepare my son’s steak. (He doesn’t like ham, and I said I’d make him a steak.) It’s not a big deal to do because I have the counter top grill, and the meat is finished in five minutes. Only after I sat down at the table did I realize I never made it. He said I shouldn’t go and make it, and he bravely ate the ham. There were many sides, so he didn’t go hungry! I froze the steak, and there were several more in the freezer. Voilà! Instant dinner!

I have a lot of green beans that weren’t cooked. So that will be the veggie part of dinner. I’ll make a salad, too. However, I’m really putting the emphasis on the potatoes. I’ll bake several medium-sized ones and I have a lot of ‘fixins’ to add. I’ll make a platter of toppings to garnish the potatoes. I’ll include whipped butter because it melts so nicely. Of course, there must be sour cream, too. Then I’ll also have some shredded cheddar and bacon bits (freshly made.) I’ll put some chopped scallions (green onions,) and chopped chives out. Even with a simple meal, the fun lies in the making of great potatoes.

People weren’t all that hungry for dessert on Sunday, so I froze the lemon cream pie I made. That will be our dessert tonight. My daughter gave us some fancy covered strawberries as an Easter gift, and I thought how easy they were to make. So, I’m adding that to today’s chores, and we can have an extra dessert. I have a ton of candy melts in all colors. So, I’ll use them as the covering. I save little fruit cups (Dole and DelMonte 4 packs) and I use them to melt chocolates in the microwave. It’s such an easy go-to treat.

I’ll make some with milk or dark chocolate. Then with the melted colors, I’ll drizzle some on top. I have sprinkles and nuts for the extra topping. I already have two pints of strawberries, so I’m set. Today is wet and dreary, and a fun project like that will keep me occupied. I’ll try to remember to take photos.

I’m still coughing a little, but I feel a lot better. With that improvement comes more energy, but I’m still taking it easy. I don’t think my husband is really getting any better, but he won’t go back to the doctor. He has a scheduled appointed for next week, but I don’t think he should wait that long. But, he doesn’t listen, so I drop it.

On to my rainy-day activities.

  1. happy you are feeling better muff!! i make chocolate covered strawberries a lot. i like to dip them in chopped nuts or cookie crunch. coconut is good also!!!

    the potato bar for tonight sounds awesome!!!

    1. Dipping strawberries is something I can do one
      handed, too. They look so good when they're finished.
