More To Do, But Not Today!

I’m still feeling well – knock wood it stays! That means I want to move, move, move, but I know that realistically, a lot of movement will take away the good feeling. So, for today, I’m in restful mode. That doesn’t mean that I can’t make lists, though, and that will be my plan for the day.

I keep looking at my blog page, and I know I have to update it – no more snowflakes! I also could add more to the right sidebar. But, little by little, I’ll get it done. Then there’s the house. I let the little guy start taking out some Easter decorations, but he was more interested in looking at them than putting them on display. I need to get the house full of flowers – real and silk. That always perks things up! Today is a dreary, wet day, so, I think I’ll at least line up some of my silk flowers to brighten the inside. I have two big brandy snifters that I want to fill with pastel eggs [not real] and place on the mantle. The little bisque eggs and rabbits will go out next week. Soon, everything will look spring-like in here. (I heard that there’s a possibility we may get snow on Easter, but I’m trying to wish that away!)

Then there are the dinners! Last night’s was easy peasy, and the boys still loved it. I got very thin, boneless, skinless chicken breasts. (I think they’re called ‘paillards.’) Then I mixed some mayo and mustard in a bowl and spread it on the chicken. I crushed some regular pretzels in the food processor and rolled the chicken in the crumbs to coat them. Because they’re thin, they only required twenty minutes in a 350° oven. I just had pasta and salad with it. My one son has begun his marathon training, so he limits his diet, but there was enough for him to choose.

Tomorrow, I’ll get started on the next Sunday birthday dinner for my other son. He wants lamb, which I really don’t like. I’ll get a roast for the boys and serve it with garlic mashed potatoes, green bean casserole, and a romaine and spinach salad. My younger son is picking up the cake from a bakery I like in Philly. My daughter and I have opted for a veggie stir fry. I won’t have a lot of advance work, but I’ll do ahead whatever I can.

I have my list started for the following week, and I’m trying to spread things out. Easter dinner will be big, and I’ll have as many as twelve at the table, but I’ll gladly accept help! Baking will come first, so my husband can help with that. I’ll plan the rest at a later time. Today, I rest.

Since Villanova was ousted from the NCAA championships, my husband is less interested in watching the games, but I’ll convince him to do so, and then I’ll relax with my reading. By tomorrow, I’ll be back to work, but once again, today is my resting day!

  1. I've experienced lamb that is overwhelmingly UNremarkable and some that I'd love to have again. Make it differently! My doc loves it, loves making it grilled with basil and mint. As some chef's will say, you have to let the main ingredient (the lamb) be the star of the show, so get good stuff and treat it well. You can make lamb burgers, I would often put ground lamb into mapo tofu instead of the "standard" ground pork, and it was great!

    Try lamb burgers; much simpler to make than Hotsy Totsy lamb dishes that take hours in the oven. Perhaps everybody wins--little one gets the lamb that's craved, but Mom doesn't get shackled to the oven. Will it work? Who can say?

    1. I could never develop a liking for lamb; hence, I only made it on rare occasions. I'll make an herb crusted roast for 'the boys,' and my daughter and I will have stir fry veggies and rice. Works for me.

  2. it's raining here as well...although the sun just came out a few minutes ago!!! it was a good inside day for me with some small, fun projects. you sure do cook a lot, i am tired today and i don't feel like cooking!!!

    1. I really don't cook a lot -- I just write about it when I do. LOL! We had leftovers.

  4. You are wise to pace yourself. I will be going on a picnic for Easter Sunday, catered one, so no cooking for me.

  6. I have never made or even tasted lamb so I don't know if I like it or not. What can I say we always ate simply growing up. I have a bunch coming for Easter too, invited 36 but not all will show up. It was my turn, the last time we hosted Easter Dinner was five years ago. I will do ahead what I can:)

    1. Growing up, we never had lamb because my Dad didn't like it. So it was later in life that I learned how much I didn't like it. 36??? Yikes -- I don't think I could handle that!
